Serves 4

1 Polish sausage sliced into ½” slices
1 red bell pepper, seeded and sliced
1 green bell pepper, seeded and sliced
1 white onion, sliced
1 tbsp olive oil
1 tbsp butter
1 tsp Worcestershire sauce
½ tsp kosher salt
½ tsp fresh ground black pepper
4 tbsp whole grain mustard

1. Heat the oil in a skillet over medium high heat
2. Add the sausage and sauté each slice until nicely browned
3. Reduce the heat to medium and add the butter and salt
4. Add the onions after the butter melts, and cook, stirring occasionally, until they begin to turn translucent
5. Add the sliced peppers, Worcestershire sauce, and black pepper. Cover and cook 10 minutes
6. Plate with a tbsp of whole grain mustard on the side

(Cook’s note: This is delicious when paired with a garlic side. One of our favorites is buttered garlic chips on hot French peasant bread)
